Sweet Beet


1 large beetroot

3 lemons juiced

1/2 teaspoon of salt

Step 1

Peel the beetroot and juice the lemons.

Step 2

Slice the beetroot into 4mm slices and half them.

Step 3

Place in a small bowl or jar and add the lemon juice and salt, making sure it is all covered.

Serve with a salad, and a mixture of lots of sides, carrot rice, avocado, potato salad... anything you wish.
